{recipe of the week} egg in the hole grilled cheese sandwiches.

today’s recipe brings together two of my favorite things: egg in a hole & grilled cheese sandwiches. i’ve always loved grilled cheeses, but i’d actually never had an egg in a hole (i’ve also heard it called egg in a basket) until a couple of weeks ago when we decided to try them for breakfast after seeing them on the pioneer woman. it was pretty much love at first bite. so, even though this isn’t exactly an original recipe, there are tons of different  ways that you can make these, and we thought we would share our version with you.

ingredients (makes 2 sandwiches):
-4 slices whole wheat sandwich bread
-2 slices sharp cheddar cheese
-2 slices muenster cheese
-2 eggs
-2-3 tablespoons real butter

directions:
to start, make sure you have all the ingredients out and ready, because once you start making the sandwiches, they go pretty fast,and it’s easier to have everything readily accessible. once you’vegot everything ready, begin by cutting out a hole in two slices ofthe bread using a mason jar lid or another similarly-sized round object (a cookie cutter or a small mug would work well, too).

if you’re making two sandwiches, the easiest way to do this is with two separate skillets (ideally, you would use an electric griddle, but we don’t own one). in one skillet, melt about 1 tablespoon of butter, then add the slices that you cut a hole in. let it brown for a couple seconds, then flip it over. add a little bit more butter inside each of the circles, and after it melts for a couple seconds, crack an egg into each “hole.”

after you’ve got your egg sides going, add a tablespoon of butter to the other skillet, let it melt for a minute, and then add the other sides of your sandwiches and top each with 1 piece of cheddar and 1 piece of muenster.

by this time, your egg sides are probably ready to be flipped, but make sure you keep an eye on them. if you like your yolks a tad runny like us, cook them for a little less time, but if you want your yolks to be all the way set, let them stay on a little longer.


once your egg sides are pretty much done on both sides, and your cheese sides are getting browned on the bottom, add one side to the other so that both sandwiches are in the same skillet. cook for another minute so that they blend together, and then, voila! you’re done!
don’t forget to saute the little circles in a little bit more butter. they’re the best part, obvi.
