{recipe of the week} broiled grapefruit with greek yogurt.

i’ve been seeing quite a few recipes for broiled grapefruits in the winter issues of some of the magazines i read now that citrus is in season. for as much as i love grapefruit, i’ve only ever really eaten it raw and plain, so this seemed like a fun, new thing to try. we’ve made this for the past two nights now, and it’s turned out to be our new favorite dessert. for those of you like me that have to have something sweet every night a couple hours after dinner, this is a nice light and fairly guilt-free way to satisfy your dessert needs. and for those of you who may avoid grapefruit because it’s too sour for your taste, perhaps the addition of melted butter and cinnamon sugar will sway you :)

ingredients: (serves 2, 1/2 grapefruit each)
 -1 grapefruit
 -2 teaspoons melted butter
 -cinnamon sugar (i used a cinnamon sugar shaker)
 -your favorite greek yogurt (we used one of the new chobani bite flavors: caramel with pineapple chunks; 
 it comes in a 5.3oz, 100 calorie container and was perfect to split on top of this dessert.

directions:
1. preheat broiler and line a baking sheet with foil.
2. cut the grapefruit in half. with a paring knife, cut around each segment and remove any seeds. 
 place the grapefruit halves on the baking sheet.
3. brush each grapefruit half with melted butter, then sprinkle each half with cinnamon sugar as desired. 
4. broil the grapefruit, approximately 10 minutes, rotating the pan once halfway through. 
 (your broiler may be faster or slower, though, so keep an eye on it)
5. remove from broiler once grapefruit are bubbling and golden brown, and top with greek yogurt. 
 serve immediately.

    Looks gorgeous! Since I have a bumper crop of lovely ruby red grapefruit, I will definitely try this tonight! The challenge will be to get your sister and dad to try it!
